Gado Gado Style Salad

This hot and cold salad is inspired by an Indonesian meal called Gado Gado. I used to love this dish as a child, and I still can’t get enough of it! 

I found that getting creative with my salads helped me to significantly increase my veg intake! It’s far too easy to fall into a rut of cooking your go-to veg in the same way time and time again… But looking up new recipes, especially ones based on lots of veg, has helped me to stay excited about including fresh veg every evening. 

In this Gado Gado Inspired vegetarian salad, I used the following ingredients:

  • Chinese cabbage – cut into 1-2cm squares
  • Grated carrots
  • Bean sprouts
  • Cucumber – sliced into 5cm long sticks
  • Brown rice
  • Marinated tofu cubes
  • French beans
  • 2 eggs
  • Satay sauce

Method:

  • Boil the brown rice.
  • Fry the tofu until crispy.
  • Boil the eggs for approx 7 minutes.
  • Heat the satay sauce.
  • Prepare the vegetables.
  • Lay out all the ingredients on a plate, with the satay sauce poured into the center.
